Walnut Cranberry Apple Salad w/ Balsamic Vinaigrette

I came up with this recipe after searching hard for a good balsamic dressing that was easy to make and had such a great tangy taste. I combined the ingredients from another salad with this easy to make balsamic vinaigrette dressing and it turned out absolutely amazing! Try it for yourself, I know you will make it again and again.



WALNUT CRANBERRY APPLE SALAD W/ BALSAMIC VINAIGRETTE

  • baby mixed greens (or whatever your favorite lettuce mixture is)
  • 1 gala apple, sliced and tossed in lemon juice (to keep from browning)
  • 1 cup dried cranberries
  • 1/2 cup candied walnuts
  • 1-2 tablespoons chopped red onion
  • blue cheese crumbles or gorganzo cheese (optional, and however much you desire)
  • Balsamic Vinaigrette dressing -- Recipe Follows

Balsamic Vinaigrette Dressing:

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon cracked pepper
  • 1/4 cup extra virgin olive oil
  • 1 clove garlic
  • a few lemon drops

Mix vinegar, honey, mustard, pepper and lemon. Pulse in food processor or small blender. Gradually add oil until well mixed. Chill for awhile. Shake well before serving over salad.
